Autumn Master Class


If you are one of those people who loves cooking hearty roasts and braises in the cooler seasons, our Master Class in May is for you. Chef Camilla Comins is definitely one of those people. Slow cooking, braising and taking time to build depth of flavours – that stuff is just her favourite. Comfort food.

In May, on the weekend of the 10th to the 12th, join Camilla for a course on all the braises and slow dishes you will need for the chilly months ahead. As always, she will be using locally sourced, seasonal ingredients in her recipes.

Produce comes from a select group of local farmers and gardeners, as well as from the African Relish garden. You’re in for a fun weekend where you get to peel, chop, mash, brown and basically just roll up your sleeves and learn. We’ll be working with lamb, kudu, quince, olives, cheese and seasonal veggies from the garden.

Learn her signature flambé lamb shoulder, slow-roast lamb neck with quince, and possibly a Durban-style lamb or pork curry. There are plenty of side dishes such as beetroot tarte and ideas for preserves like quince jelly. Many of the dishes customers loved at her restaurant, The Table at De Meye, will be on the weekend menu.

Local hero Gay’s Dairy – worth a quick visit during leisure time – makes incredible cheese for the African Relish cheese soufflé that will also feature in the mix. We’ll also be using local venison either in a braise, or we’ll show you how to smoke a loin or a fillet for a delicious starter.

It’s not all work on the cooking weekend though. You’ll be able to hang up that apron from time to time over the weekend too. There’s a ghost walk and village ramble with local story-teller Ailsa Tudhope. You can visit the Farmer’s Market on Saturday morning and chat with local producers and growers over a pancake or bacon and egg roll.

After that, it’s back into the kitchen with Camilla for more cooking, foodie stories and fun. Saturday night’s dinner feast is a proper experience of Karoo cooking and hospitality.

There’s a Sunday treat for anyone not spent from a weekend of cooking and eating. Join local botanist Dr Sue Milton for a botanical excursion in the pristine Karoo veld. Sue weaves a fascinating tale of the life and times of the Karoo biome on these walks.
