Journey To Jazz
We’re thrilled to be a part of this festival for its second year running this year, taking place from 1-5 May 2024.
Journey to Jazz is an annual Karoo festival drawing inspiration from the history, art and natural environment of the Prince Albert desert. This intimate and bespoke experience offers a week of music, masterclasses, food and nature all at the foothills of the Swartberg Mountains. A full programme of local and international artists perform throughout the town in restaurants, on farms and in churches. The Prince Albert Community Trust and the locals curate a community events programme which sees visitors camping under the stars, doing yoga at sunrise and walking the Wolwekraal conservancy. Try out these ‘BOERE DIM SUM’
5 portions of 6 (makes 30)
Ingredients:
500g boerewors
125ml chopped spring onions
1 chilli, chopped
3 cm ginger, peeled and grated
2 cloves of garlic, crushed
2 tablespoons of soya sauce
1 tablespoon of fish sauce
Wonton wrappers from your local supermarket
Oil to fry
Flour water
Vinegar water
Method
Remove boerewors meat from casing
Add all the ingredients (accept wrappers, oil, flour and vinegar water) mix well.
Assemble dumpling, place 1,5 teaspoon of filling in centre of each wrapper.
Rub edge with water and pinch edges of half moon together.
Add oil to frying pan.
When hot add dumplings to pan.
Mix 2 tablespoons of flour to ½ cup of water
As soon as dumpling sizzles in pad, add a drizzle of flour water to just cover base of pan
Add a little vinegar water
Cover with bamboo steamer lid
Wait till snowflake foot covers bottom of pan
Add more flour water and vinegar water if necessary
