Pastry made Easy with Theresa de Vries

This course begins on Friday 20 October at lunchtime, guests gather at the cooking school for a light lunch and to go through the itinerary for the weekend. You meet Theresa de Vries, farmer’s wife from Brandvlei in the upper Karoo, Northern Cape, also popular runner up of the Kyknet reality food series, Kokkedoor.

Here Theresa’s’ career took off as she became known for her skills in pastry and requests from all over South Africa streamed in for talks and demos at various woman’s conferences. Earlier this year Theresa also published her first cookery book Deeg that is currently only published in Afrikaans.

The course would include making of rough puff and flaky pastry, shortcrust – sweet and savoury, hot water pastry, strudel and phyllo pastry in different variations.

ITINERARY FOR THE WEEKEND 

FRIDAY

12:00 Arrive at African Relish and settle into your accommodation.

13:00 Light lunch prepared by resident chef Camilla. Meet your guest chef Theresa and the African Relish Team and discuss pastry tools, ingredients, measurements, common mistakes and solutions.

14:00 Pastry Session 1. Technique and variations of flop free sweet and savoury shortcrust as well as hot water pastry.

18:30 Ghost walk and village ramble – Ailsa Tudhope, historian and story teller, takes you on a journey back in time with tales of ghosts and village rogues from the past.

Dinner not included, we can be booked on your behalf in one of Prince Albert’s lovely restaurants.

SATURDAY

08:30 Visit to Saturday market for some local flavour.

09:00 Breakfast at African Relish

10:00 Pastry Session 2. Here we will be taught the technique and variations of rough puff and puff pastry.  This will be done in different shapes for example apple roses, cones and straws, plaiting, and making old fashion milk tart.

13:00 – Light lunch at African Relish

14:30 Pastry Session 3. Talk about the difference in pastries, uses, storage, equipment and common mistakes.  In this session you will master strudel and phyllo pastry.

17:00 At leisure.

SUNDAY

07:30 Gather at African Relish for coffee and rusks. Botanical excursion with

Dr Sue Milton, renowned botanist and specialist in Karoo biome biology.

10:00 Pastry Session 4. Breakfast, making a dish from Theresa’s recipe book ‘DEEG’.

11:30 Final questions / discussion session

12:00 – Depart on onward journey

 

Price: R3000 per person

Inclusive: Course, both lunches and breakfasts, excursions, recipe handout and special African Relish apron. You leave with a hamper of freshly baked items you made during the course.

Excludes: Accommodation, gratuity, dinner and drinks.
